Sambal Oelek is excellent for any recipe calling for fresh chilies or chili paste. It can be used as an ingredient in cooking or as a condiment to a dish. Other ingredients can be added to this basic chili paste for different recipes - garlic, ginger, onion, galangal, lime juice, lemongrass and tamarind paste. Add a teaspoon or 2 of roasted dried shrimp paste [belacan, also spelt belachan or blacan] to make Sambal Belacan - a classic Malaysian condiment.
