INGREDIENTS :

12 oz semolina [cornmeal]

4 oz all purpose flour
-
10 eggs
-
12 oz butter [tinned butter preferred for it's
oiliness]
-
12 oz sugar
-
½ tsp
salt
8 oz almonds, ground [but not too finely]
1 tbsp vanilla essence
2
tsp almond essence

To Prepare :
-
In a mixing bowl, add butter and half the sugar
-
Whip to a creamy consistency- In a 2nd mixing bowl, add
the yolks of 10 eggs, the whites of 4 eggs and the other half of the sugar
-
Whip till as airy as you can get it
- To the first mixing bowl, add the semolina, almonds, vanilla and almond essences
&
salt. Mix well
- Fold in the contents of the 2nd mixing bowl [egg mixture] and lastly the 4 oz of
flour
- Pour the dough into a well greased baking pan [meatloaf size pan]
Bake in a preheated oven at 400F for 8 mins, then reduce heat to 350F for 1
hr 10 mins
