INGREDIENTS
:
- 1-1½ lb whole fresh Pomfret, cleaned
-
3 slices fresh ginger, finely shredded
-
1-2 stalks scallions, sliced
-
3 dried shitake mushrooms, softened in water & thinly sliced [optional]
- 1 tsp sesame oil
-
1½ tbsp cooking oil, corn or
canola oil
-
1-2 tbsp light soy sauce
- salt
and white pepper
-
1 fresh red chili, finely sliced [optional]
Variation : Use any whole 'flat type' fish - Sole, Flounder
or Fluke. Fish cut into steaks are also ideal for this recipe - Halibut,
Cod, Grouper, Salmon or Chilean Sea Bass, as pictured below.

To Prepare :
- Make 3 diagonal slashes across each side of the cleaned fish
- Sprinkle salt fish and pepper lightly, place in a shallow dish, preferably a serving dish or platter
- Put ginger, shitake mushrooms into each 'slash of the fish on both sides

Pour sesame oil, vegetable oil and soy sauce evenly over the fish

Set the dish in a
steamer, steam fish for about 15-20 minutes; or till just done depending on the size and thickness

Carefully remove dish from steamer, garnish fish with scallions and chilies
-
Serve immediately with
steamed rice

a side of
hot chili sauce!
