  • 1-2 tbsp light soy sauce
  • salt and white pepper
  • 1 fresh red chili, finely sliced [optional]

       To Prepare :

  • Make 3 diagonal slashes across each side of the cleaned fish
  • Sprinkle salt fish and pepper lightly, place in a shallow dish, preferably a serving dish or platter
  • Put ginger, shitake mushrooms into each 'slash of the fish on both sides
  • Pour sesame oil, vegetable oil and soy sauce evenly over the fish
  • Set the dish in a steamer, steam fish for about 15-20 minutes; or till just done depending on the size and thickness
  • Carefully remove dish from steamer, garnish fish with scallions and chilies
  • Serve immediately with steamed rice - and a side of hot chili sauce!
