Mix the spices with 3 quarts of water, 3 large pureed onions, simmer for 30 mins, add a large can or 2 of mackerels or sardines - and the spicy, tangy aromatic soup is ready! To assemble the dish, put a handful of rice noodles [preferably, the thick round kind] into a bowl, pour the soup over the noodles and garnish with a few fresh ingredients - cucumber, onion, pineapple, lettuce, mint leaves and chili.
