This glossary is mainly in Malay i.e. Bahasa
Malaysia. However, many food ingredients or terms are better
known in local Chinese or Indian dialects. This is because of
Malaysia's multi-ethnic population, and its culturally diverse
cuisine and cooking styles. Certain ingredients are used
exclusively, or more frequently in different ethnic kitchens,
while some foods may be forbidden due to religious beliefs.
Wherever possible, spelling variations, similar names in
English, or in other countries nearby and afar, shall also be
included in the glossary. |

Yeast.
It also
refers to Ferment.
Rempah
Spice Paste, Masala [India]
A mixture of spices, or a combination
of herds and spices. The spices can be
dry or fresh. It can also be a
combination of dry and fresh
ingredients, such as fresh chilies,
onions, garlic or ginger. The
ingredients are ground into a fine
paste by using a mortar and pestle, or
an electric blender or food processor.
The benefit of using an old fashion
granite mortar & pestle, is that no
unnecessary liquid need be added. With
an electric blender or food processor,
a little water or liquid is usually
required to get the it going.

A salad made of

dressed in a special sauce.

A general term
for Bread.
Roti Canai
: Also called
Roti Paratha
or
Roti Prata.
An Indian specialty, it is a flaky
flat bread or pancake, usually served
with a side of curry.
Rumbia
Sago Palm.
Rusa
Deer.
Daging Rusa
: Deer Meat or
Venison.
